1 pack banza chickpea pasta
2 small zucchini
1 cup small tomatoes
1/2 cup feta
1/2 cup chopped kalamata olives
1/2 diced red onion
1/2 cup olive oil
1/8 cup white wine vinegar
1.2 cup fresh hers like coriander, mint & basil
1 tsp dried basil
1 tsp dried oregano
Salt & pepper to taste
1 tbsp honey
1. Cook pasta according packaging. Rinse of with
cold water after.
2. Slice the zucchini and roast with olive oil salt and pepper in a skillet each side for couple minutes until soft.
3. Mix all ingredients for dressing in a small cup.
4. Add pasta to a bowl, add roasted zucchini,
tomatoes, olives, feta, red onion & dressing
